Recipe of the Day: Easter Craffin from Ruslan Senichkin

Ingredients:
- Eggs – 1 pc.
- Yolks – 2 pcs.
- Flour – 350 g
- Sugar – 3 tbsp.
- Cranberries – 100 g
- Raisins – 100 g
- Turmeric – 0.5 tsp.
- Almonds – 150 g
- Butter – 130 g
- Orange juice – 30 ml
- Milk – 80 ml
- Yeast – 6 g
Preparation:
- Prepare the sourdough. In a separate bowl mix warm milk, 1 tsp. sugar and yeast. Stir thoroughly so that everything is well dissolved. And set aside in a warm place for 25 minutes.
- We take a separate bowl, beat one egg and two yolks, add 2.5 tbsp. spoonfuls of sugar. Beat well. Remember, for the eggs to be well beaten they must be taken out of the refrigerator in advance, so that they are at room temperature.
- Sift the flour three times to oxygenate it as much as possible. In the flour add the starter, beaten eggs, melted butter and orange juice. Stir with your hands.
- Knead the dough well. At first everything will stick to your hands, but after 10 minutes you will notice how the dough will become elastic and super soft. Transfer the dough to a bowl and place in a warm place for 1 hour.
- Roll out the dough like strudel, so that it is thin. Grease it with melted butter. Sprinkle with dried fruit, then nuts, vanilla sugar and I recommend adding some turmeric. Wrap into a roll and then cut it in half, but don’t cut all the way through. Curl in the form of a snail. Transfer to a mold for 20 minutes to let the dough stand and rise.
- Bake at 200 ° for 15 minutes, then reduce the temperature to 180 ° and wait another 25 minutes.
