Tasty and bright: we are preparing pumpkin soup

Ukrainian chef of Colombian origin, restaurateur, judge of “MasterChef. Battle of the seasons” on STB Hector Jimenez-Bravo shared a recipe for pumpkin soup on social media, and also told how to prepare a dish from a seasonal product at any time of the year!  

“Zucchini season has already passed, now pumpkins have ripened. Elementary recipe for the first course. Smart idea, how to make the recipe out of season: freeze the mixture for pumpkin soup for the winter, so that the taste of golden autumn can be revived for the New Year, ” said the chef.

Ingredients:

  • Pumpkin – 400 grams.
  • Onion – 100 grams.
  • Garlic – 30 grams.
  • Thyme – 5 grams.
  • Orange – 100 grams.
  • Vegetable / chicken broth – 200 ml.
  • Fat cream – 100 ml.
  • Salt.
  • Pepper.

To serve:

  • Olive oil.
  • Pumpkin seeds.

Method of cooking:  

Cut the onion, garlic, pumpkin, orange, add thyme and store in a slider bag in the freezer (Ector uses slider bags from Freken BOK for storage). Pour the ingredients into a pan with butter, add the broth (you can make it ahead of time and store it in the freezer). Beat with an immersion blender, add salt, pepper and cream. Beat again. Add salt and olive oil to a plate, decorate with pumpkin seeds. Bon appetit!
