Baked eggplant in the Sicilian style according to the recipe of Hector Jimenez-Bravo
Hector Jimenez-Bravo showed on the social network how to cook delicious baked eggplants.
Baked eggplants are a tasty and healthy seasonal dish that should be enjoyed.
“ After this recipe, you will never want regular baked eggplant , ” Hector said.
Ingredients:
• Eggplant – 1 pc.
• Olive oil.
• Salt pepper
Stuffing :
• Onion – 50 grams.
• Garlic – 20 grams.
• Minced meat of any kind – 100 grams.
• Peeled tomatoes – 50-100 grams.
• Salt pepper.
• Mozzarella.
Tapinade:
• Green pitted olives — 100 grams.
• Walnut – 50 grams.
• Parmesan — 50 grams.
• Olive oil – 75 grams.
• Basil – 10 grams.
• Salt pepper.
Method of cooking:
Cut the eggplant into two parts, make crosswise incisions in each , grease with olive oil, salt and pepper , mash well .
Put in the oven for 20 minutes at 180 degrees.
Cut the onion and garlic, fry in a pan with oil, salt and pepper, add minced meat. Mix well and fry.
Add peeled tomatoes to the pan.
Mix olives, walnuts, parmesan , olive oil and basil in a blender, beat until smooth.
Take out the eggplant, spread the minced meat mixture on it, sprinkle with mozzarella and put in the oven for 5 minutes at 200 degrees.
Place the tapinad on the dish, add a little olive oil and garnish with basil.
