Yevhen Klopotenko and Taras Topolya: recipes of Ukrainian dishes

Yevhen Klopotenko and Taras Topolya STB premiered the culinary project Hell’s Bread with Yevhen Klopotenko. In the third episode, the project’s kitchen was visited by Taras Topolya, a musician, leader of the Antibodies band, military medic and volunteer, and father of many children. Yevhen Klopotenko and Taras cooked two incredible Ukrainian dishes.

Yevhen Klopotenko will help Ukrainianize his guests’ favorite dishes and give new life to the products of our ancestors! Taras Topolya brought buckwheat to the project’s kitchen! What is unusual to cook with Ukrainians’ favorite product? Yevhen Klopotenko offered to make a Yavoriv pie!

  • Milk – 125 ml;
  • Yeast – 25 grams;
  • Flour – 550 grams;
  • Egg – 1 pc;
  • Water – 125 ml;
  • Salt;
  • Sugar – 1 tbsp;
  • Buckwheat – 200 grams;
  • Potatoes – 8 pcs;
  • Onions – 2 pcs;
  • Vegetable oil – 2 tbsp.
Method of cooking:

First, make the dough: combine milk with yeast and leave it for 15 minutes. Take the flour and combine it with the dough that has already started to act. Add the egg, oil, water, salt, and sugar. Stir well and leave in a warm place for one hour. While the dough is rising, mix buckwheat with mashed potatoes and add salt. Fry the chopped onion in vegetable oil and add it to the mixture. Roll out the dough well and divide it into two parts. Put the first part of the dough into the mold and put the filling in. Cover the filling with the second part of the dough and pinch the ends. To get a beautiful color, brush the top of our cake with an egg. Put it in the oven, preheated to 180 degrees, for 50 minutes. Bon appetit!

The second authentic Ukrainian dish that Yevhen Klopotenko offered to cook was Kherson (or Bilyayiv) soup. Like the previous dish, it is included in the list of intangible heritage of Ukraine.

  • Water – 3 liters;
  • Parsley root – 1 pc;
  • Onions – 1 pc;
  • Carrots – 1 pc;
  • Mullet – 300 grams;
  • Shrimps (Black Sea) – 100 grams;
  • Lamb – 300 grams;
  • Chicken strips;
  • Potatoes – 3 – 4 pcs;
  • Tomato – 1 pc;
  • Garlic – 3 cloves;
  • Vinegar – ½ tbsp.
Method of cooking:

First, prepare the base – the broth: parsley root (you can also replace it with another root), an unpeeled onion, cut in half, and peeled carrots, and cook for 10 minutes. Next, add chopped mullet (or any other sea fish), Black Sea shrimp, lamb, and chicken strips. Cook for 15-20 minutes over low heat until the fish soup merges its flavors with the fish and meat. Then add the potatoes and cook for a while longer. Finally, grate one peeled tomato into the soup on a coarse grater. Remove the soup from the heat. Make the vinegar: chop the garlic, add the vinegar, and a small portion of our finished soup. Stir well and add one tablespoon to a plate for each serving.
