How to make mayonnaise at home: life hack from Alex Yakutov

According to legend, it was on this day almost 300 years ago in Mayon, France, that a court chef prepared a sauce called mayonnaise, which was named after its place of origin. To celebrate the holiday, Alex Yakutov, the chef and expert of the New Channel reality TV show On Knives, offers a quick and easy recipe for a popular sauce that you can make at home.

“I’ll share the secret of making mayonnaise. If you have whipped all the ingredients, but the sauce is too oily, add 5 tablespoons of drinking water and whip again. This way you can get a mayonnaise that has a consistency similar to Provence, a real sauce made according to a classic recipe,” he says.

Ingredients:
  • vegetable oil – 0.5 liters
  • quail eggs – 10 pcs.
  • mild mustard – 1 tsp. l.
  • sugar – 1 tsp. l.
  • salt – 1 tsp. l.
  • apple or wine vinegar – 1 tbsp. l.
  • soy sauce – 2 tbsp. l.
  • ground black pepper – 1/4 tsp. l.
Cooking a dish:
  1. Beat the eggs into a container. Add the oil, mustard, sugar, salt, soy sauce, and vinegar.
  2. Thoroughly beat all the ingredients in a blender.
  3. Pour the ground black pepper into the container, whisk again and taste.
  4. If the mayonnaise turns out to be oily, use the Chef’s life hack: add water and whisk again. The sauce is ready!
