Gartanachka: a recipe from Yevhen Klopotenko and Aram Arzumanyan

Yevhen Klopotenko will help Ukrainianize his guests’ favorite dishes and give new life to the products of our ancestors! Yes, Aram Arzumanyan brought pilaf to the project’s kitchen! Yevhen Klopotenko proposed to make an authentic Ukrainian dish – gartanachka!
Ingredients:
- Chicken drumsticks – 7 pcs.
- Millet – 250 grams.
- Lard – 100 grams;
- Onion – 1 pc.
- Eggs – 5 pcs.
- Potatoes – 4 – 5 pcs.
- Sour cream – 100 grams.
- Smoked pears – 3-4 pcs.
- The onions are green.
- Parsley.
- Salt.
Method of cooking:
First, you need to make a fryer. To do this, take onions and bacon, chop them finely, and fry them well until golden brown. Pour three liters of water into the pot. While the water is boiling, peel the potatoes and cut them into medium cubes. Boil the potatoes. Add the chicken drumsticks to the potatoes to make a nice broth and also to cook the drumsticks. Separately, pour hot water over the millet and stir it well so that it is not bitter, and then drain it. Transfer the millet to the potatoes with the shanks. Then we add the secret of our dish – smoked pears. If you’re cooking outdoors, you don’t need to add smoked pears, because the smoke flavor will be created by the cauldron. Wait until the liquid in our saucepan decreases in volume. We take the shins out of the pan and start kneading our gartanachka. Take five beaten eggs and add them to the gartanachka while it is still hot, and mix well and well to cook the eggs. Add the onion and bacon fat, finely chopped parsley and green onions, and mix thoroughly. Add sour cream for a light and delicate flavor. Our gartanachka is ready! To make the flavor more intense, put the drumsticks on a plate. Enjoy!
