How Olga Martynovska and Vladimir Yaroslavsky shocked foreigners

Ukrainian dishes are recognized as some of the most delicious in the world. Foreigners are surprised by the combination of some ingredients, but they remember our food for a long time. And they want more! An episode of the TV show “eVopytaniya” (New Channel), which featured the culinary front of Ukraine, asked what a foreigner would be treated to in Ukraine. And behind the scenes of the show, Ukrainian chefs Volodymyr Yaroslavsky and Olga Martynovska told us what they would cook for foreigners.

“Our cuisine is very tasty! Olya and I cooked a lot of Ukrainian delicacies at charity dinners: our honey cake, various stuffed cabbage rolls, dumplings, fish or meat cutlets, for example, in the Kyiv style, and banosh. Ukrainian cuisine is very diverse and interesting for foreigners. We can impress even with ordinary pies. They don’t have that,” Yaroslavsky says.

His colleague named one Ukrainian dish that she would definitely cook for foreigners.

“What we have already served at charity dinners, and what I would serve to foreigners again, is stuffed cabbage rolls. They are very delicate and fancy,” says Martynovska. “Vovchyk and I made a filling of white fish and shrimp, like the ones from Odesa. We wrapped them in beetroot leaves and served them with a sauce that goes with fish cabbage rolls. It’s extremely tasty, everyone likes it, everyone wants to repeat it at home. And it’s a very modern and hip Ukrainian dish. There is little rice, no frying, but there is a very delicate sauce. That’s why cabbage rolls are my favorite, and after borscht, they’re the hallmark of Ukrainian cuisine.”
