Boikivsky knysh with meat: Yevhen Klopotenko’s recipe

Boyko knysh with meat STB continues to air premiere episodes of the culinary project Hell’s Bread with Yevhen Klopotenko. In the new episode, the Ukrainian theater and film actress, star of the STB series Natalka Denysenko visited the kitchen. Together, Yevhen and Natalka cooked an incredibly tasty dish, namely Boyko’s knysh with meat.

Ingredients:
  • Yeast – 20 grams;
  • Water – 180 grams;
  • Flour – 360 grams;
  • Sugar – 40 grams;
  • Salt – 5 grams;
  • Potatoes – 5 pcs;
  • Onion – 1 pc;
  • Minced beef and chicken – 450 grams;
  • Thyme;
  • Egg – 1 pc.

Method of cooking:

To make Boyko knysh with meat, first take 20 grams of yeast and dilute it in 180 grams of water. Wait 20 minutes for the yeast to start fermenting. Pour this mixture into the flour, mix well, add 40 grams of sugar and 5 grams of salt. Knead well and set the dough aside for one hour in a warm place. After the dough has risen, you need to knead it well again, divide the dough into two even balls and roll it out well. To prepare the filling, we need to boil five potatoes, mash them, fry the onion and minced meat in a frying pan separately, add salt and a pinch of thyme, which will give an incredible flavor. Next, combine mashed potatoes with minced meat and onions, and mix until smooth. Distribute it evenly between the two pieces of dough and form open pies. Brush them with eggs and put them in an already preheated oven at  180 degrees for 40 to 50 minutes. Bake until ready. Take it out, cool it, taste it!
