“I propose to cook the author’s carbonara with hot smoked mackerel. It turns out to be a very economical, hearty and tasty dish. But remember: you don’t need to add cream to the sauce, and a raw egg for the presentation,” emphasizes Alex Yakutov. “Carbonara has been around since Italian miners took smoked pork cheeks to work, fried them and added them to the pasta.

Carbonara recipe: ingredients:
  • spaghetti – 0.5 packs (250 g)
  • water – 2 liters
  • egg yolk – 3 pcs.
  • Parmesan cheese – 50-60 g (and 50 g for sprinkling)
  • hot smoked mackerel – 1 pc.
  • salt – 20 g
  • ground black pepper – ¼ tsp. l.
Cooking a dish:
  1. Put the spaghetti in salted boiling water. Boil them according to the instructions on the package.
  2. Beat three egg yolks in a bowl. Add the parmesan cheese and mix.
  3. When the water in the pot boils, take 100 g of this water and add it to the cottage cheese and egg yolks. Mix thoroughly. It should have a consistency like a sauce. Also add ground black pepper and stir.
  4. Add the pasta to the sauce. Mix thoroughly again. The dish should be juicy, tender, and flavorful.
  5. Cut the mackerel into fibers and add to the carbonara. Sprinkle with grated parmesan. Ready to serve!
