“United for Freedom: Easter recipe from Iryna Adonina

United for FreedomEaster is a charity project of Iryna Adonina, which consists of selling fragrant Easter cakes made according to the traditional recipe of her great-grandmother, 20% of which will be used to support our defenders.

“The taste of these Easter cakes brings back memories of my childhood, when the whole family would gather around the table and I would help my grandmother with the dough, which would fill the whole house with its aroma,” Iryna recalls.

Exclusively for Woman Magazine, Iryna shared her own Easter recipe, which has been passed down between generations, and according to which she has been baking Easter cakes for her family for many years.

Easter recipe:

We’re gonna need it:

  • Flour – 3 kg (be sure to sift);
  • Milk – 1 liter;
  • Egg – 10 pcs. or 25 egg yolks; 
  • Fat – 200-250 g or butter;
  • Sunflower oil – 200 g (for hands);
  • Sugar – 1 kg;
  • Yeast – 2 packs of “Lvivskie” 100 g each;
  • Salt – 1 teaspoon;
  • Raisins – 0.5 kg (wash with hot water to soften),  
  • Vanilla – according to your taste

Method of cooking:

Dissolve the yeast in 100-150 ml of warm water, add 1 tbsp. a spoonful of sugar. When the yeast starts to ferment, pour it into a saucepan or bowl, add 0.5 liters of warm milk and a little flour to make a not too thick dough. When the dough is ready, add another 0.5 liters of warm milk and fat or butter.

Решту цукру збити з яйцями, додати сіль і вилити в каструлю, додати ще борошна і вимішувати дерев’яною ложкою, тісто не повинно бути щільним (може залишитися трохи борошна, а може й ні). Put it in a warm place and add raisins (candied fruit) when the dough is ready. Knead with your hands, having previously greased them in warm sunflower oil.  Knead the dough very, very well and put it in a warm place. When it has risen, grease the baking dishes with sunflower oil and sprinkle with coarse semolina.

Make the dough into balls of such a size that they fill the molds 1/3 of the way up. Wait until the dough rises again almost to the top, more than halfway up, and put it in the oven over medium heat for about 45 minutes.
