Homemade milk waffles by Alex Yakutov
The master of culinary arts shared a recipe for a dish that your loved ones will definitely enjoy. Every year on March 25, the International Waffle Day is celebrated. So on Saturday, everyone should treat themselves and their families to this dish! And Alex Yakutov, an expert of the New Channel’s reality show On Knives, decided to help with the recipe. He described in detail how to make delicious homemade waffles.
Ingredients:
For the dough:
- mashed potatoes – 100 g
- eggs – 2 pcs.
- milk – 500 ml
- flour – 220 g
- salt – 0.5 tsp. l.
- pepper – to taste
- sugar – 1 tbsp. l.
- green onions – 1 bunch
- dill – 1 bunch
- vegetable oil – 30 g
For forshmak:
- herring – 1 pc.
- white bread – 70 g (or 1 small roll)
- cottage cheese 9% fat – 70 g
- butter – 50 g
- milk – for soaking herring and bread
- salt, pepper, coriander – to taste
- mustard in grains – 2 tsp. l.
Homemade waffles. Cooking a dish:
- First, prepare lean mashed potatoes without oil or water. That is, boil the potatoes, drain them, and grind them through a sieve.
- Add eggs, milk, flour, salt, pepper, sugar to the potatoes and mix thoroughly.
- Finely chop the white part of the green onion and dill. Add to the potato mixture, stir and let stand for 10-15 minutes.
- Pour the oil into the middle of the waffle iron, put the desired amount of potato batter and close the waffle iron. Bake the waffles until golden brown and crispy.
- For the forshmak, soak the whole and boned herring fillet in milk and leave it in the refrigerator for 30-40 minutes. This is necessary for the fish to “give up” the salt. After that, blend the herring with a blender. Soak the bread in milk and leave it for 10-15 minutes. Then squeeze it out and mix it with the herring. Also add cheese, butter, salt, pepper, coriander and mustard seeds. Finely chop the green part of the onion and dill. Stir into the fish mixture.
- Put the forshmak on the waffles. If desired, add thinly sliced sun-dried tomato and garnish with herbs.
