A recipe for pancakes: Olga Martynovska cooks them for her daughter every day
A recipe for pancakes from Ukrainian chef Olga Martynovska.
“Those who have been with me for a long time know that Virunchyk has been eating pancakes every morning since she was 2 years old. Now she’s grown up and eats 2-3. When I ask her, “Daughter, let’s have an omelette,” she says: “Okay, but only after the pancake.”
Every morning they are fresh, because Madame does not eat reheated ones. That’s why I cook with 1 small egg. It turns out 3 large pancakes or 4-5 small ones, depending on the pan.
So the pancake recipe is as follows:
- Break 1 small egg;
- add 2 tablespoons of milk;
- a pinch of salt + a pinch of sugar;
- We stab with a whisk;
- Pour in 2 tablespoons of flour (low protein, so they are more tender);
- Mix until thick and homogeneous without lumps;
- add milk (you will need 200-220 ml in total, a glass);
- Stir and add a spoonful of melted butter or oil;
- Pour it into a hot greased frying pan,” says the chef.
