Tangerine pie in a pan: recipe by Volodymyr Yaroslavskyi
Ukrainian chef, restaurateur, judge of “MasterChef. Professionals”-4, the premiere of which is scheduled for February 2023 on STB, Vladimir Yaroslavsky shared an original and delicious winter recipe. We offer you to cook a tangerine pie in a pan!
“I started cooking when it was light, and finished – on the burner. But we, Ukrainians, are unbreakable, so we are not afraid of difficulties. Do you agree? So when you want something unusual, but simple and sweet, I suggest to cook my pie.” – the chef notes.
We’re gonna need it:
- 5-6 medium-sized tangerines;
- 20 grams of butter;
- 30 grams of sugar;
- Ground cardamom or cinnamon if desired.
For the dough:
- 1 large egg (or 2 small ones);
- 50 grams of milk;
- 50 grams of sugar;
- 25 grams of vegetable oil;
- 120 grams of flour;
- 5 grams of baking powder;
- Lemon zest or vanillin.
Method of cooking:
I pour sugar and butter on a non-stick frying pan. I stir with a spatula and bring it to caramel color! On top I put peeled and cut in half tangerines (of course, the seeds must be removed). Sprinkle with spices. I immediately pour the prepared dough on top, where all the ingredients are well mixed with a whisk. Make sure that the consistency of the dough is similar to sour cream. I cover with a lid and “bake” the cake on low heat until the dough is baked.
I determine the readiness either by hand or with a wooden skewer. I also watch the fire to brown the cake. Caramel color means that the dish is ready and delicious! I turn the finished cake on a plate. You can even eat it hot. It turns out juicy and fragrant!
