How to store bread properly: tips from Konstantin Grubich

Recently, the morning show has introduced a new author’s column by Konstantin Grubich called “I Know – I Consume”. The host is a well-known expert in everything related to the kitchen, cooking, product selection, etc. In the first issue, we talked about bread – how to choose it and how to store it better so that it doesn’t mold.

So Kostyantyn Grubych asked the experts a popular question: why does bread get moldy

He identified two main reasons:

1. Technology disruption. The biggest problem is the violation of industrial sanitation and personal hygiene of employees.

2. Low-quality flour. Sometimes unscrupulous producers bake their bread from fodder grain (grain grown for animals). In addition, too many chemical additives are added to the dough during baking.

But no matter how good it is, if it is stored incorrectly, it will certainly begin to bloom. The host gave some key tips: “Store it in a place where it is colder than +25 degrees and the humidity does not exceed 60-70%. It is extremely important to control the temperature of bread storage and ventilate the room.”

Also,  one of the reasons for the bread bloom is that producers meet consumer demands and cut the loaf at the enterprise. Therefore, it is imperative that you process the knives every two hours.

“It is also very important to pay attention to the type of bread. For example, if the bread is made from white flour rather than whole wheat, it can start to mold faster. And suddenly, if you see even a tiny spot of mold, you need to get rid of this loaf. You don’t need to cut off the crust or cut off a piece, because the bread is already infected,” advises Grubych.

What should you do to prevent bread from getting moldy?

1.      Remember the bread bins and store the bread in them. The breadbox should be wooden or ceramic.

2.      You can put the bread in linen bags.

3.      Bread can be wrapped in special wired paper. This will help extend the quality and shelf life of the bread by several days.

“There is a common misconception that bread should be refrigerated. This is partly correct. The humidity in the refrigerator is high and you will, on the contrary, accelerate the spoilage of bread. But if you put it in the freezer and cut it into slices beforehand to make it easier to defrost, then I guarantee that the quality of the bread will not deteriorate,” the host says.

And another interesting tip: if you put it in a bread bowl and you can’t get rid of excess moisture, sprinkle rice on the bottom of the bread bowl or put a glass of salt in it. It is rice and salt that absorb excess moisture. And it is important for you to choose one bread producer you trust and try to buy only from them.
