Recipe for flavorful mushroom soup with cheese
STB premiered the culinary project Hell’s Bread with Yevhen Klopotenko. The guest of the first episode was TV presenter Volodymyr Ostapchuk. Together, Yevhen and Volodymyr cooked two authentic and incredibly tasty dishes. Learn the recipe for Ukrainian mushroom soup in the article!
Yevhen Klopotenko will help Ukrainianize his guests’ favorite dishes and give new life to the products of our ancestors! For example, Volodymyr Ostapchuk said that he loves julienne, which his mother used to cook for him as a child. Yevhen suggested taking similar ingredients and making a mushroom soup with cheese!
Ingredients:
- Mushrooms – 250 grams;
- Canned mushrooms or porcini mushrooms – 150 grams;
- Water – 3 liters;
- Parsnip or parsley roots – 1 pc;
- Onion – 1 pc;
- Carrots – 1 pc;
- Potatoes – 4 pcs;
- Hard cheese – 100 grams;
A recipe for a flavorful mushroom soup. Method of cooking:
Heat the water, add parsnip or parsley roots and half the onion. Chop the mushrooms into fairly large pieces and add them to the broth, chop the potatoes and carrots into half rings and add them to the broth. Next, add the porcini mushrooms, but divide them into two parts: Add 50 grams of dried mushrooms to the broth, and soak the rest separately in water. Cook the soup at a low temperature. The slower the fire, the better the mushrooms will release their flavor.
Heat a frying pan, add vegetable oil, chop half the onion and fry the canned mushrooms. Fry for one minute and add to the already cooked soup. Leave the fish soup for 15 minutes to soak up the flavor. After that, put the fish soup on a plate, add grated hard cheese, and chopped mushrooms that we soaked before. We close our eyes and savor the mushroom soup that unites the West and Central part of Ukraine.
